Spiced Lamb Curry
Ingredients:
For the Lamb:
1 ½ pounds lamb (cut into bite-sized pieces)
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon turmeric
1 tablespoon yogurt (for marination)
For the Curry Sauce:
2 tablespoons vegetable oil
1 large onion (finely chopped)
3 garlic cloves (minced)
1 teaspoon grated ginger
2 tomatoes (blended or finely chopped)
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon garam masala
½ teaspoon chili powder (adjust to taste)
1 teaspoon turmeric
1 teaspoon salt (adjust to taste)
1 cup water or beef broth
½ cup coconut milk or heavy cream (for creaminess)
For Garnish & Serving:
Fresh cilantro (chopped)
Cooked basmati rice or naan
Directions:
1️⃣ Marinate the Lamb: In a bowl, mix lamb with salt, black pepper, turmeric, and yogurt. Let it marinate for at least 20 minutes to enhance flavor.
2️⃣ Sauté the Aromatics: Heat oil in a large pan over medium heat. Add chopped onions and sauté for 4-5 minutes until golden brown. Stir in garlic and ginger, cooking for another minute.
3️⃣ Build the Curry Base: Add cumin, coriander, garam masala, chili powder, turmeric, and salt. Stir quickly to release the flavors.
4️⃣ Simmer the Lamb: Add the marinated lamb to the pan and cook for 5-7 minutes until browned. Stir in blended tomatoes and water (or broth), then cover and let it simmer on low heat for 45-50 minutes, stirring occasionally.
5️⃣ Make it Creamy: Stir in coconut milk or heavy cream, cooking for another 5 minutes until the sauce thickens. Adjust seasoning if needed.
6️⃣ Serve & Garnish: Garnish with fresh cilantro and serve hot with basmati rice or naan. Enjoy this rich and flavorful lamb curry!
